Vietnamese Shrimp Cracker Salad

As seen in “Practicing Courage” Season 1, Episode 10

Ingredients

  • 1 small carrot

  • 1 small red onion

  • 1 cucumber 

  • 3 tablespoons lemon juice

  • 3 ½ tablespoons sugar

  • 3 tablespoons fish sauce

  • 2 tablespoons water

  • 1 ½ teaspoons salt

  • ¼ lb peeled and cooked shrimp

  • Prawn crackers 

  • Chopped peanuts

  • Chopped mint

Steps

  1. Cut cucumber in half and scoop out seeds

  2. Cut cucumber, carrot, and red onion into small strips. Mix together in bowl. 

  3. In a separate bowl, mix together ingredients for dressing:

    • Lemon juice

    • Fish sauce

    • Salt

    • Sugar

    • Water

  4. Fry prawn crackers according to package

  5. Mix together vegetables, dressing, shrimp and prawn crackers

  6. Top with peanuts and mint, if desired

  7. Eat!
